History – Rabbit Hole’s beginning started when Kaveh Zamanian fell in love with a woman from Louisville. This is when he quickly began to love the American spirits. He quit his profession and moved his family to Kentucky to start his new company which is known as Rabbit Hole. They offer two other bourbons, a rye whiskey, and a limited edition founders collection I’d love to get my hands on. “Together we’re not just making great whiskey. We’re building a legacy.”- Rabbit Hole.
Value – Fair price for $60. However I’d be a liar if I didn’t say I’d like to pay less.
Appearance – Light amber in color. A very unique bottle design and an equally well-developed label. I love the way they incorporated a rabbit on this corked bottle. The shape provides a sigh of relief, it’s not the ole plain jane round bottle that one is accustomed to.
Nose – Apples mixed with honey are the first scent. Cinnamon followed by traces of corn wraps it up. A very well-put-together nose that does not dissipate too fast.
Palate – Orange, honey/caramel, spicy mint with a twist of oak. The palate lingers for a good bit so it’s a good thing you will welcome it.
Finish – Considering the proof you would expect a decent amount of afterburn for the finish. I find myself surprised it doesn’t have the 95-proof octane burn. I was able to sit and enjoy the rich flavors the palate displayed.
Summary – In summary, This bottle compliments itself in every step of this review. Nose to Finish, it will have you grinning like a possum eating a sweet tater.
“I have been wanting the privilege of reviewing this “cavehill” straight bourbon for a while now. Finally got my chance to do so, and I am not disappointed. From the moment I uncorked this sucker and took my first sip, I knew I would have to try the rest of Rabbit Hole’s bourbon and Rye. The main pitfall is I wish it has slightly more of a burn at the end, that’s just how I like it. And of course, be cheaper than $60 but what can you do?”
